Apple Cinnamon Muffin Tops

You don't have to be ashamed of these Muffin Tops ;) They are down right TASTY! The spice topping creates a sweet flaky crust across the top, its perfect! These muffin tops are delicious and are the perfect size for a quick snack (although I went back for more).

1 1/2 cups flour
1 1/2 teaspoons baking powder (heaping)
1/2 teaspoon baking soda
1 teaspoon cinnamon (can use more or less)
1/2 teaspoon allspice
1/4 teaspoon nutmeg
1/4 teaspoon salt
2 large eggs
1 cup light brown sugar (can use more)
1/2 cup butter, melted
1 1/4 cups unsweetened applesauce

Spice Topping:
6 -7 tablespoons sugar
1/2 teaspoon cinnamon
1/2 teaspoon allspice
1/2 teaspoon nutmeg

Directions: (makes about 20 muffin tops)
Set the oven to 350°F and butter the Whoopie Pie tins
For the muffins, mix the first 7 dry ingredients in a bowl.
In another large bowl whisk together the eggs and the brown sugar until well combined.
Add in the melted butter whisking continuously until mixture is creamy. Stir in applesauce.
Fold in flour mixture until just combined.
Divide the batter evenly between Whoopie Pie tins. About ¾ full.
To make the topping, stir together all ingredients then sprinkle over tops of muffin batter.
Bake for about 15-18 minutes, or until done.
Cool in pan for 5-10 minutes then dump out Muffin Tops.

  1. I totally want one (or 3) right now. I'm sitting her with my cup of tea and my stomach is growling. These look delicious! Bet you were using up that left over applesauce from the caramel apple cupcakes? I need to do the same! But first, I need to get one of these pans!

  2. Yep, that is exactly what inspired these little guys haha. I am falling so behind on Club:BAKED its so hard to get to the store for the ingredients in time haha.
